Very untraditional. The grapes in this full-bodied wine were fermented whole-berry in a puncheon: more like a red wine’s fermentation than a white’s. Elevage continued in barrel on the skins for an entire year! The extended skin contact gives the wine its golden color, spicy notes and generous mouthfeel.
This heavy white lends itself to creative food pairings. Try it with Asian food or grilled pork!
